Instructions

Step 1: Prepare the Cheesecake Base

  1. In a large bowl, combine the cheese, sugar, lemon juice, and zest. Mix with a hand mixer until smooth and creamy.
  2. Add eggs one at a time, mixing well after each addition to ensure a uniform consistency.

Step 2: Prepare the Gelatin

  1. Soak the gelatin in 50 ml of cold water for about 5 minutes.
  2. Heat the soaked gelatin gently in a water bath or microwave until completely dissolved. Do not boil.
  3. Gradually mix the dissolved gelatin into the cheese mixture, ensuring there are no lumps.
